Excluded lines (entry anomalies)
Lines whose implied price per unit deviates more than ×5 from the ingredient median are excluded from all calculations — typically grams entered as kilos. Fix them in the Expenses app.
Method notes
Consumption is read from Food purchases (Expenses app), not from recipes — purchases absorb daily menus, staff meals, losses and comps.
Frequently bought ingredients (≥2 purchase lines/month) use the last 3 months; sack-bought ingredients use the full 10-month window, so irregular bulk purchases are not misread.
The window slides automatically: the current month is excluded, and the previous month only counts once its recorded purchases reach at least half the usual rhythm.
Ingredients first purchased inside the window are averaged from their first purchase month only.
Flour and Pain Farine are grouped: they substitute each other in practice.
Bread is baked in-house, so its flour is already inside the purchases (rule of thumb for cross-checking: starter + main ≈ 1.5 × 70 g bread per cover).
Each ingredient is shown in a single reference unit (its most frequent one, kg preferred).
Purchases made in other units (pack, unit, can…) are converted by value — amount paid ÷ the ingredient's median price in its reference unit — because pack counts are unreliable but money is. Converted rows are marked ≈.
An ingredient never bought in a weighable unit keeps its native unit.
